Why choose? Honestly my single most unkillable character is something of a cleric. Mage robes and a hood with heavy gloves, boots and shield. Top it off with a bit of oakflesh magic and a mace designed for maximum damage and minimum exposure and he's pretty much a mini-god roaming Skyrim. At level 3 he put a giant in its place in melee combat with about 80% of his health leftover. At level 6 he informed a duo of frost trolls in the mountains that their services were no longer required. Walked away from that with full health.
In the end it's really all about play style. Like surprise attacks and stealth kills? Little slower variety of gameplay? Go Light. Like two handers? Go light body, heavy hands feet and head. Like sword and board? Go heavy and be a tank. Like magic? Go robes and light hands and feet.
